Salted Caramel Cauliflower Brownie

This is a recipe from Fresh Fitness Foods. And yes its made of cauliflower but I promise it tastes far from it. It is a chocolatey sweet spongey treat that is hard to believe it’s healthy, but we promise it is!

Ingredients:

For the brownie:

  • 120g flour

  • 70g ground almond

  • 30g cocoa powder

  • 60g dark chocolate chips or smashed up pieces

  • ½ cauliflower

  • 15 dates

  • 1 tsp vanilla extract

  • 2 tbsp maple syrup

Directions:

Brownie:

  1. Steam or boil the cauliflower for 20 minutes until it is soft to the touch.

  2. Pour off the water and cool under cold running water for 5 minutes.

  3. Place the cauliflower, dates, vanilla and maple syrup into a blender.

  4. Blend for around 5 minutes stirring every 1-2 minutes until it is a smooth paste.

  5. Pre-heat an oven to 180c and line a baking tray with greaseproof paper.

  6. In a separate bowl mix the flour, almonds, cocoa powder and chocolate in a bowl.

  7. Add the wet cauliflower mix to the dry ingredients.

  8. Mix together the ingredients and then pour into the pre-lined baking tray.

  9. Place the brownie into the oven for 15-20 minutes or until it is springy to the touch.

Caramel sauce:

  1. Place the maple syrup into a pan and bring to the boil.

  2. Mix the water with the corn flour and whisk into the maple syrup.

  3. Keep on whisking until thick.

  4. Add the salt and pour the caramel over the brownie.

Chocolate ganache:

  1. Place a pan of water onto the stove.

  2. Place the chocolate and the almond milk in a bowl and place the bowl on top of the pan.

  3. Melt the chocolate but do not stir.

  4. Once melted mix together then pour over the caramel.
